Currently this key can't be disabled. May I know why do you want to disable it?

Manager wants to disable the speaker phone option so the guests do not use it or employees in close proximity do not use the speakerphone and disrupt others.

Is this something that's possible? Even if the button is not disabled, is there a way to maybe enforce the volume of the speaker to be 0? Or some other workaround?

This is possible now
features.speaker_mode.enable

Has to be done with autoprovision.

What exactly are you doing?
